Spicy salmon healthy faux-sushi
18:19Whitney Hills Everyone that knows me well, knows that I love spicy salmon rolls. Handrolls specifically. I also know that white rice, mayo, and tempura bits are not exactly the healthiest of options. Yesterday I decided to make a quick and delicious dinner, which satisfied my sushi craving, while being healthy and affordable!
I broiled a piece of salmon, which gave the edges a nice crispy texture, while leaving the insides tasty and silky. I boiled a head of cauliflour until it was very soft. I used almost the whole head and the whole piece of salmon, which was maybe 5 or 6oz. I cut the caulilflour into small pieces, put the salmon overtop (include the crispy skin) and added about 1tbsp of mayo and a dash of sirracha. This made two large servings, and the cooked salmon with a bit of mayo gave enough delicious omega fats to make up for the tempura bits, and the cauliflour tasted even better than the rice. You could throw in some avocado if desired, but I dont think this dish needed it. Plus you save on the sodium of the soy sauce. In this instance I think the cooked salmon along with the skin gives the umamai taste that the soy sauce usually brings to the sushi. Mmmm low carb and full of nutrients. Both items were on sale and I only spent $5 on the dish for two!! The same price as one hand roll. Happy eating!
