Baking Experiments: Bananer-Brown Rice Bar

18:32Whitney Hills

I recently purchased some brown rice protein, which is a hypoallergenic protein powder. While it is not the tastiest in shakes, I think it's the best for baking. I love protein bars, and since I had a few bananas in the freezer, thought I'd play around with some baking. This recipe contains mostly carbs with a little bit of protein, but is a great dessert with a couple scoops of plain Greek yogurt and berries. While I didn't use any exact meaurements, here's an approximation of what I used ( I live on the wild side).

1 egg
3 scoops brown rice protein (Progressive Brand)
2 individual servings apple sauce
4 thawed ripened bananas
1 tsp baking soda
Splash milk
2.5 cups quick oats
Dust pumpkin pie spice on top
*I mixed in 2 tsp matcha powder also....not necessary
*next time I would add 1 tsp stevia

Bake for 350 for 25 mins in preheated oven.
If you can find gluten free oats, this is a gluten and nut free recipe, and can easily be made vegan and dairy free.
