I must confess I have not been sticking to my "healthy eating" plan lately, and really need a good kick in the butt. There have been waaay too many chai latte (made with actual tea, not syrup!)+ pumpkin loaf breakasts, a burger (I dont really eat burgers). There were onion rings, and beer. Ew. Too much soup, and not enough salads.

I have been promising myself to get out of this December rut and made a delicious salad for dinner. Last night was arugla, little bit of mellow blue cheese, caramalized onions, walnuts and slivers of pear. Tonights creation was a spring mix topped with 1/2 head of broccoli, 1/2 pound green beans, 1 small zucchini, and about 1 whole broccoli stalk, shredded. I steamed the veggies, minus the arugula, until they were the right texture. The beans still crunchy, the shredded broccoli melted in my mouth. I threw in a whole diced avocado and a bit of the left over blue cheese, and threw on some apple cider vinegar. That should reboot the system!
