My fantabulous man created AMAZING dishes- a Bolognese Sauce on zucchini noodles, a combination of zucchini with heirloom carrot noodles with enoki mushrooms and rainbow trout, and another meal of 2 hour roasted balsamic chicken with an almost ratatouille like sauce. Can you tell he loves this stuff? From a zucchini hater to lover with a mere $7, he has sworn off any other type of noodle and was amazed with how tasty healthy can be.
1 zucchini has only 35 calories, so feel free to load up on these portions. Throw in frozen veggies while making a sauce, try enoki mushrroms to add in some texture, use peanut sauce to bring some thai flavour or try different nut pestos.
